APLIKASI BIONANOKOMPOSIT PEKTIN-NANOPARTIKEL ZnO UNTUK MEMPERPANJANG UMUR SIMPAN BUAH BELIMBING (Averrhoa carambola L.)

Belimbing (Averrhoa carambola L.) merupakan salah satu buah tropis yang mempunyai umur simpan pendek yaitu sekitar 2-3 hari. Masalah terjadi pada belimbing saat distribusi adalah karena faktor benturan dan penyakit dapat merusak belimbing. Tujuan dari penelitian ini untuk mendapatkan konsentrasi penambahan pektin nanopartikel ZnO (NP-ZnO) terbaik dalam pembuatan bionanokomposit mempertahankan kesegaran dewa sampai waktunya dikonsumsi. Nanopartikel disintesis dengan metode presipitasi suhu pemanasan 80°C selama 2 jam ditanur 500°C 5 jam. terbentuk dikarakterisasi menggunakan Fourier Transform Infra Red (FTIR) Scanning Electron Microscopy (SEM). Pembuatan dilakukan 4 taraf Pektin 1%+ZnO 0% (P1Z0), 1%(P1Z1), 1.5%+ZnO 0%(P1.5Z0) Pektin1.5%+ZnO 1%(P1.5Z1). Hasil analisis FTIR menunjukkan bahwa telah adanya puncak panjang gelombang 474 cm-1 morfologi bulat ketika dianalisis SEM. Aplikasi efektif menurunkan susut bobot ditunjukkan perlakuan P1.5Z1 memiliki paling rendah sebesar 21.42% hari kedelapan penyimpanan. Pada kestabilan warna terlihat P1.5Z0 nilai browning indeks 290.62 Dari penampakan fisik dilapisi pektin+ZnO daya tahan terhadap lebih baik, tidak kerusakan disebabkan oleh kapang ABSTRACT: Star fruit is a tropical that has short shelf life of around days.
